• Ensures the maintenance of a clean, sanitary kitchen by supervising utility staff and to actively work in stewarding
• Assigns utility stewards to their station and allocate any special cleaning
• Ensures kitchen floors and walk-coolers and fridges are clean by inspecting the work of stewards
• Monitors dishwashers and makes corrections when needed
• Takes inventory of existing dishware, silverware, and other supplies
• Supervises the breaking down and washing of all dishes and silverware
• Checks work carried out by stewards to ensure high standard of work is undertaken and maintained
• Ensures storage and safekeeping of all cleaning materials and equipment
• Supervises the operation of cleaning equipment and tools, including the dish washing machine, hand wash stations pot-scrubbing station, and trash compactor.
• Manages the washing and disinfecting of kitchen area, tables, tools, knives, and equipment.
• Ensures clean wares are stored in appropriate areas.
• Observes that trashcans and dumpster area are well kept and maintained
• Reports any defects to supervisor to ensure health and safety procedures are followed and to enable repairs to be carried out
• Performs additional related duties when requested by the Executive Chef
