Commis-2 Jun 4th 2013, 05:37 GENERAL SCOPE & PURPOSE • Under the direction of the Chef or Kitchen In-Charge he/she is preparing mise- place at whatever station he/she is assigned. • Follows up on food product deliveries from the store or to other outlets. • In charge of cleanliness of store, refrigerators, freezers, kitchen machinery and utensils of his/her outlet or section. • Assists with all the kitchen work. DUTIES AND RESPONSIBILITIES 1. Report for duty punctually wearing the correct uniform and name badge at all times. 2. Provide a courteous and professional service at all times. 3. Maintain good working relationships with your own colleagues, and all other departments. 4. Complete understanding of and adhere to the company's policy relating to fire, hygiene, health and safety. 5. Maintain a high standard of personal appearance and hygiene at all times. 6. Complete understanding of the company's employee handbook and adhere to the regulations contained within. 7. The Commis II is aware of the importance of quality food served in our company and hence makes every effort to prepare the best product possible. 8. Never uses equipment for any purpose for which it is not intended either by house rules or by custom. 9. Responsible for all kitchen utensils to be available at all times cleaned and stored after use. Also responsible that the kitchen is cleaned before he/she finishes his/her shift. 10. Must know the menu, ingredients, method of cooking and time to prepare each item. 11. Conducts him (her) self in such a manner as to encourage fellow employees to do likewise. 12. Makes sure that his/her set ups are always ready so that he/she may give quick, efficient and quality service. 13. Follows instructions meticulously and is all the time cooperative and willing to learn more. 14. Record all dishes (including all basic recipes) in his/her recipe book for future and training purposes.
